Description

A sweet and simple strawberry oat crumble with a buttery brown sugar oat crumb topping, and jammy berry filling. Easily adaptable, gluten free and vegan friendly.

Instructions

  1. Preheat the oven to 375℉. Lightly grease a 9×9-inch baking dish with butter or baking spray. Set aside.
  2. In a medium mixing bowl, toss together the strawberries, sugar, vanilla, lemon zest, and arrowroot starch, if using. Set aside.
  3. Make the crumble topping: In a small mixing bowl, stir together the oats, flour, brown sugar, salt, baking soda, cinnamon, and cardamom until combined.
  4. Add the butter, and use a pastry blender or your fingers to cut the butter into the dry ingredients. Continue until the butter is completely incorporated, and the mixture comes together into a chunky crumb.
  5. Pour the strawberry mixture into your prepared baking dish. Top with the crumble topping and bake for 25-35 minutes, until the crumble topping is golden brown and the berry juices begin to bubble.
  6. Remove from the oven and let cool for 10 minutes. Serve warm with scoops of vanilla ice cream. Enjoy!!


Notes

¹ Arrowroot starch is my favorite pie and fruit filling thickener. It creates a smooth, shiny sauce without a noticeable added taste. As a second choice, you can also substitute (blended) instant tapioca pearls or cornstarch. Or, omit the starch, and enjoy a saucier crumble!

² Make this crumble gluten free by substituting all-purpose gluten free flour and making sure your rolled oats are also GF Almond or oat flour would likely work as well.

³ Make it vegan by using vegan butter (such as Earth Balance buttery baking sticks), or room-temperature unrefined coconut oil and be sure to use sugar produced without the use of animal products.
